Resources and preparation of plant foods in a pre-Hispanic site on the southern border of the Huasteca: analysis of starches in dental calculi

Abstract
In the last decades, research on the diet in pre-Hispanic Mexico has been enriched with chemical analysis and recently with the starch extraction technique. In this work, starch granules present in teeth of adult individuals and one subadult were identified. The dental calculation analyzed corresponds to burials from the Tabuco INAH-APITUX Archaeological Salvage Project (National Institute of Anthropology and History-Integral Port Administration of Tuxpan), in the coastal area of Tuxpan, Veracruz. The results obtained are a contribution to the reconstruction of the eating pattern of the Postclassic population that lived in the southern region of the Huasteca.
